Lazy Crepes Recipe
My favorite recipes are the ones that make me look like a super star mom yet at the same time require very little actual effort to make. This is one of those recipes. I’m really stretching by even calling this a “recipe”. More like a breakfast idea. I’ve done a ton of different things with the Paleo Tortilla Recipe, from using them for tacos, adding deli meat and veggies for wraps, to banana almond butter and honey roll ups. When I realized how much my family liked them, I would make big batches in the week and pull them out for whatever I needed them for.
I woke up one Sunday morning, way before anyone else was up, and I just felt motivated to make everyone a nice breakfast. Running to the store was not an option, as I guess I should have stated, I was maybe barely motivated to do this special meal in actuality. So that morning, I just had to use what I had in the house, which was slim pickins. I did have some leftover tortillas that I thought I would get creative with though. The result were these delicious, thrown together, almost effortless Crepes that totally impressed everyone. Basically I won Sunday!
6 Paleo Tortillas- (see Recipe)
1 Container of So Delicious Coconut Milk Yogurt- (I used the Strawberry/Banana)
1 pint of strawberries sliced
1 half pint of blueberries
3/4 c Dark Chocolate Covered Almonds (We prefer the ones from Trader Joes with Sea Salt and Turbinado Sugar)
Spread each tortilla with yogurt. Top with fruit. Fold the sides up and flip over. Top with more yogurt.
Pulse the almonds in a food processor a few times. Take a large spoon and sprinkle the mixture on top of the crepes to finish them off.
Call your family down for breakfast and act like you’ve been slaving away all morning.
